Cajun hominy skillet is a great way to use hominy in a recipe. Of course, this dish contains the holy trinity of Cajun cooking in Louisiana which is onions, peppers and celery along with my homemade Cajun seasoning. I use the Cajun seasoning on lots of meats and in vegetable dishes. It just gives them a good flavor. This makes a wonderful side dish to any meal or use your imagination and add hamburger, chicken or a favorite meat to make it a one skillet meal. We love easy dishes with lots of flavor and I love the colors in this one. It looks so pretty on the table.
Cajun hominy skillet ingredients needed:
This dish is made with simple ingredients but it’s loaded in flavor!
2 (15.5 ounce) can hominy
Bacon
Bacon drippings
Green onion or regular onion
Sweet green pepper
Celery
Diced tomatoes with green chilis- we like to use the mild Rotel tomatoes in this dish too. Great flavor!
Garlic powder
Salt
Black pepper
Cajun seasoning
You could also add smoked sausage to this dish! That would be a delicious addition and make it more a main dish.

Cajun Hominy Skillet
This is an easy skillet dish that has a lot of flavor.
Servings: 4 servings
- 2 15.5 ounce can hominy, rinsed and drained (I use one white and one yellow can of hominy)
- 5 slices bacon cooked and drained
- 2 tablespoons bacon drippings
- 1/2 cup chopped green onion or regular onion
- 1/2 cup chopped sweet green pepper
- 1/2 cup chopped celery
- 1 10 ounce can diced tomatoes with green chilis
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 teaspoon Cajun seasoning

Cook the bacon in a skillet, remove, drain and set aside saving a couple tablespoons of the drippings. Add the onion, green pepper and celery to the skillet and cook until tender. Pour in drained hominy and tomatoes with green chilis. Add garlic powder, salt, black pepper and Cajun seasoning. Cover and simmer for about 15 minutes. Crumble cooked bacon on top.
