NineSigma, representing a multibillion-dollar beverage manufacturer, seeks a food material, food ingredient, or food additive that can change how retronasal aroma is perceived. Retronasal aroma is the aroma that is perceived through the passage from the throat to the nose when a food or drink is swallowed and plays a part in “taste”. The client aims to deepen the flavor of beverages by enhancing the speed or strength of perception of the retronasal aroma.
Proposals for food materials, food ingredients, and food additives that will potentially achieve the above goal (including various extracts and fragrances) are widely anticipated.
There are two ways of perceiving odor: orthonasal aroma perceived through the nose before drinking; and retronasal aroma perceived through the passage from the throat to the nose after drinking. It is known that retronasal aroma also plays a pivotal role in the “taste” of beverages. While orthonasal aroma can be perceived by flavors, retronasal aroma is difficult to be perceived just by flavors.
Therefore, to ultimately create an ideal flavor, the client has issued this open request to discover a food material, food ingredient, or food additive that can be added to beverages to change how retronasal aroma is perceived.
