This French onion roasted potato salad will quickly become a family favorite.
My family loves this dish. It’s full of flavor and so easy to prepare. Roasting the potatoes adds a different texture to this salad and then add in french onion dip, bacon, and crispy fried onions….it’s just so good! This dish is perfect for any potluck or picnic. Plus, it couldn’t be easier. You just roast the potatoes and toss everything together. Win! Win!
French Onion Roasted Potato Salad
2 lbs of red potatoes, diced
2 tablespoons of olive oil
1/2 tablespoon of garlic powder
1/2 cup of cooked bacon, crumbled
1 cup of French onion dip (this can be found in the refrigerated section of your grocery store
1/4 cup of dill pickle relish
Crispy fried onions
Preheat oven to 400 degrees. Mix diced potatoes, olive oil, and garlic powder in a big bowl and mix together. Spread onto a baking pan and roast for 45 minutes to an hour. Let potatoes completely cool. Mix potatoes and remaining ingredients together and let chill in the refrigerator for at least an hour. Top with crispy fried onions before serving. Serves 4. This recipe can easily be doubled.
