Getting your children to eat vegetables can be a battle if they’re fussy about all things healthy.

It can be frustrating trying to get all the vitamins and minerals little ones need in their diet when they push away the good stuff.

But, growing kids need their veggies – and one woman has shared her clever hack for getting fussy folk to eat theirs.

The Aussie mum explained that she made her own version of McDonald’s chicken nuggets, but managed to stuff six vegetables inside each one for her son who has sensory issues.

She boiled spinach, carrots, broccoli, courgette, onion and bell pepper with a garlic and beef stock and when it was cooked blended it all into a mush, reports the Daily Mail.

That’s a great variety, with vitamin C, A, K, iron, potassium, beta carotene, calcium and more!

The paste is them added to chicken mince, an egg and some breadcrumbs until it all comes together and is “easy to handle”.

You can use whatever vegetables you prefer – it won’t affect the mix.

The mum seasoned the mix (she used paprika and pepper) and piped it into nugget shapes.

Make sure you set the nuggets on greaseproof or baking paper so they don’t stick to the tray.

Then, freeze the nuggets until hard.

When they’re frozen, dip the shaped chicken in tempura batter, spray with oil and bake at 220C until brown and crispy looking.

Yum!

The mum posted a snap of the clever veggie nuggets to show that you can’t tell there are vegetables in the mix.

And, we have to admit they’re very convincing.

You’d be hard pushed to find a fussy veg-hater who wouldn’t like these nuggets.
