Welcome to the weekend, my friends! What a crazy week of weather. Last week, I mentioned how lovely our days had been and then we had two days of light snow followed by four gorgeous days in the 70s. My brother is in town this weekend and I have friends visiting next week, so here’s hoping for some lovely days to share with them all.

(You know me though, even if it’s sleeting and wet and cold as can be, I’ll still think my beloved Ohio is the best place on earth and there’s nowhere else I’d rather be.)

ON THE BLOG this week: What’s not to love about a perfectly crisp, cheese-filled quesadilla? The first time my sister Jenny made me a quesadilla, I sighed with the first bite and knew that my quesadilla-making world had been changed. I’ll owe her forever for teaching me how to make perfect quesadillas.

This spicy and flavorful Spanish Rice is a great side dish for those quesadillas that we enjoyed a few nights ago. The rice can be made with a good amount of heat (or without any heat at all) and the tomatoes balance the dish well.

If you love banana bread even half as much as my family does, I promise that you will love these easy Banana Waffles. They meet the craving for banana bread with a light and fluffy waffle, perfect for any topping you choose.

White Balsamic Vinaigrette is light, sweet, and tangy with just enough oil to coat a salad and not leave it soggy. This vinaigrette is part of my very favorite summer salad recipe, my sister Jenny’s Orange Parsley Salad.

A Simple Cheese Board is a welcome addition to any party, gathering, or snack table. These tips I’m sharing today are going to make it easy for you to pull together an easy cheese board with little more than what you might find in your refrigerator or freezer.

What I’m CRAVING: Speaking of quesadillas, what is this magic? These Cuban Quesadillas by The Candid Appetite look and sound fantastic!

My FAVORITE THING this week is this Caramel Bedtime Tea. Let me tell you, my friends, this whole tea-drinking world is a slippery slope. First, I’m brewing a cup of peppermint tea and somehow enjoying that more than my morning latte. (I repeat, WHO am I these days?)

Now, I’m looking forward to my bedtime cup of tea each night and loving it so much. I’ve tried sleepytime tea in the past and just hated it. Maybe there is a chamomile tea out there that I’d enjoy, but so far, not so much. It just isn’t my thing. But this tea? While it does have some chamomile in it, it is lovely as can be.

What I’m READING: Heaven to Betsy / Betsy in Spite of Herself by Maud Hart Lovelace. These two books are my least favorite in the series, yet I still love them dearly. I’m ready for Betsy to grow into her own personality and naturally, I already have the next books waiting on my Kindle.

What I’m LISTENING to: A Summer in Italy by Brian Crane. If you aren’t familiar with Brian Crain, you’re missing out. He’s a pianist and composer and his work is utterly peaceful. I often stream it while working.
