My family loves this recipe for yellow squash fritters and I cannot make enough of them. We like them with a meal or just as a snack with ranch dressing or salsa. They are good dipped in just about anything. You could double this recipe if you want to make a lot or even cut it in half to make just a few fritters to try them. Yellow summer squash, do not peel
Buttermilk or regular milk
Oil for frying

2cupsshredded or grated yellow summer squashdo not peel
1/3cupfinely chopped onion
2/3cupbuttermilk or regular milk
Oil for fryingabout 1/2 cup
Whisk together the flour, cornmeal, chopped onion, salt, black pepper and garlic powder in a large bowl. Stir in shredded squash, egg and buttermilk. Drop by spoonfuls into hot oil. Brown on each side. Drain on paper towels.
