Three easy was to toast coconut. I love this ingredient in anything and like it even better toasted. I put it in cakes, love it in pie and sprinkle it on salads and cereal for a little bit of sweetness when I leave out the sugar.
Toast Coconut in the Microwave:
Sprinkle 1/2 cup coconut on a glass pie dish or plate. Microwave 3 or 4 minutes stirring every 30 seconds after the first two minutes.
Toasted in the Oven:
Place on a baking sheet in a preheated 325 degree oven for 5 to 10 minutes stirring every couple minutes until coconut is toasted.
Toasted on Top of the Stove:
Place 1/2 cup in a preheated skillet on top of the stove for 2 to 5 minutes stirring often until toasted a golden brown. Do not put oil in the skillet.
Sweetened coconut will brown faster than unsweetened and fresh will take longer to brown because it is wetter. You can make as much as you like or as little. It keeps well in an airtight container for up to a month and will keep in freezer for a couple months.
Toasted coconut is delicious on warm oatmeal, cereal, top of banana bread, the possibilities are endless. We love this coconut pie.. you will too!
